This is one of the best ways to get nearly complete protein from a vegetable. Use a wide-mouth mason jar (easier to clean) and a stainless mesh drain cover from your local hardware store. This makes daily rinsing easy. Soak overnight the first night. After that, rinse daily and drain well. Cover with the regular jar lid to keep moist. Takes about 3 to 4 days to get a quart of sprouts from one-third cup of dry. These lentils make very tastey sprouts, with a crunch like chopped almonds when cooked with par-cooked potatoes, sweet potatoes or other starchy vegetable. Eight minutes is enough. Don't let them get too long or green before cooking or they will taste a little grassy. Good raw rolled in rice paper with green onions and dipped, or on sandwiches.

They make a good substitute for celery or green pepper in salads, soups and vegetable combinations.
