I purchased these noodles expecting the typical fat udon I am accustomed to. Instead, the noodles I recived are thin, more like fine linguine. They are still tasty, but I wish I had known they'd be different than I anticipated before I ordered an entire case. I guess that's my own fault, but buyer beware, I suppose...

Soba noodles are thin Japanese noodles made of buckwheat flour (soba-ko) and wheat flour (komugi-ko). They are roughly as thick as Italian spaghetti, and prepared in various hot and cold dishes. The most basic soba dish is zaru soba in which boiled, cold soba noodles are eaten with a soya based dipping sauce (tsuyu).
